Miss Polly’s Southwestern Ranchero Rice Skillet



Here is an easy, frugal, tasty dish that can be prepared in the morning or the night before for a healthy & delicious lunch or dinner.
Some of the embellishments you can add are:

Cheddar or Monterey Jack Cheese
Chopped onions
Salsa Verde-personal fav is 365 Organic Roasted Salsa Verde
Assorted salsas

The recipe goes as follows:

2 cups long grain rice
4 cups water
One 15 oz can 365 Organics Ranchero Beans, undrained
Desired amount of Nice. (Found at Walgreens) or
Grilled Chicken Breast Strips or even better yet, grilled chicken tenders or grilled chicken breast
Desired amount of garlic-I used Spice LY Organic Granulated Roasted Garlic

Mix all ingredients in a 5 or 6 quart capacity skillet with tight fitting lid and cook bring to a boil then turn down heat to simmer until rice is done and water is absorbed.
