How easy a delicious, date ready dinner can be when you grill the chicken ahead and make the pesto sauce.
I used Market Place Basil Pesto Sauce found at Wal-Mart, but Trader Joe’s and Conrad in a make great made ahead pestos. Also check your local family owned Italian deli… they have pesto sauce usually prepared that day.
1 cup frozen Buotolli chicken and herb tortellini
About 10 ripe grape tomatoes
Fresh basil to your liking
Good quality Reggiano Parmesan cheese, shredded

Boil just enough water to cook a cup worth of frozen or fresh tortellini. I used a frozen chicken and herb tortellini. You can choose whatever flavor you like.
If you pick fresh tortellini then you’ll only cook it for a short time. Usually when the tortellini or ravioli floats that’s when its done.
Once the tortellinis cooked, drain it with small colander or spider like used in Asian cooking for frying. I like that better than the traditional spaghetti forks and pasta for because it doesn’t damage the pasta. Added to another skillet and then add the tomatoes fresh basil the grilled chicken and it drizzling of the pesto sauce, however much you like he taps on very low heat until just warmed. You don’t overheat the pesto because it will be bitter. Once warmed, add shredded good quality Parmesan to the dish, just until the cheese melts.
Serve with iced tea, wine or your favorite drink and a green salad with traditional Italian vinaigrette or dress your salad with home made balsamic dressing.
