Delicious Gluten Free Banana Bread



I wanted to play around with more gluten free recipes today, so I came up with this really yummy banana bread recipe! It’s lovely and moist and really versatile. I’ll be trying it next time with some protein powder, but this was a really good start! You can replace the sugars with raw/coconut sugar if you don’t want to use normal caster sugar, it works just as well!

Ingredients (Makes 2 Loaves | 12 slices per loaf)

  • 2 cups of gluten free all purpose plain flour
  • ½ tsp of ground rock/sea salt
  • 1 tsp baking soda
  • 2 cups of mashed banana (4-5 ripe)
  • 4 whole eggs
  • 1 cup of sugar (or just add 3-4 more bananas and ½ a cup of honey or agave nectar)
  • 1/3 cup of olive oil or coconut oil
  • 1 ½ tsp vanilla extract
  • ½ cup of chopped, toasted walnuts and pecans (or whatever you prefer)
