These last few weeks of summer have taken a toll on my meal planning routine. The unpredictability of our summer schedule has caused me to lose sight of what works for my family. I NEED a good meal plan to avoid the drive through or pizza delivery man. So today, it’s back to the basics. Here’s what we plan on…what we WILL be eating this week! I’ve noted where our kids will eat something other than what I prepare for my husband and me. Almost always, my children know they are expected to eat what is served to them but occasionally I do make an exception!
Monday: Zucchini “pizzas” with homemade meatballs and salad. Will serve whole wheat pasta for the kids.
Tuesday: Tilapia, roasted red potatoes, green beans
Wednesday: Whole chicken, steamed broccoli and rolls
Thursday: Thai Chicken Salad with Spicy Peanut Sauce from My Kitchen Escapades
