My room mate Alberto Ferreira came home after a long day working and we made a dinner of a simple and quick rotisserie chicken, Steamed Rice -that had been cooked in a rice cooker and was set to warm, and this salad, which was totally impromptu.

About 1/2 cup of chopped yellow onion, 1/4 cup chopped green bell pepper,  and about a cup of chopped cucumber, all chopped the same size.

Alberto made a dressing of a drizzle of extra virgin olive oil and some red wine vinegar and a little ground black pepper.

You can leave the dressing off and it would be just as good, and lower in fat, or you can add your choice of any of Kraft Fat Free Dressings.
