Rice with Chicken, Chipotle Chile, Green Peppers, Onion & Garlic

I am trying to think of a more imaginative name for wonderful rice that I created this afternoon coming from looking in the produce bin and saying “WOW combine all this together!”

I will take some photos of it tomorrow. I wish you could have smelled the kitchen when I was sautéing all the chopped peppers, minced garlic and onion with the Mrs Dash Chipotle Salt Free Seasoning, sea salt and World Market’s CA garlic powder.

I will have to make it again and take photos aftee the vegetables cool. I am not taking the chance of wrecking either my Nikon 24 MP DSLR camera or my Galaxy Note 4 phablet wrecking it with steam!

My roommate Alberto and I ate it before I could capture a photo of it! I have to be faster next time before the dish disappears like Polly’s best magic act!

I used 2 cups of long grain rice to 4 cups water and after sautéing 1 chopped green pepper, 1/2 onion and 4 garlic cloves, I cooked the rice until tender in a large 6 quart non stick aluminum pan.

Get a rotisserie chicken and add as much chicken as you’d like to the rice and save the rest for another dish like chicken enchiladas or chicken noodle soup.


My roommate Alberto loved it and said it was delicious, but had a spicy kick to it. I didn’t notice how “muey Caliente” it was, probably because I lived in southern California so long where the Mexican food influences are high along with various Asian cuisines.
