Miss Polly’s BBQ Mini Herbed Chicken Meatloaves




The baked mini Italian Herbed Chicken Meatloaves…baked after 30 minutes at 400 degrees. 3 have no sauce and 3 have Chris and Pitt’s BBQ Sauce. You can make baked chicken meat balls to make with spaghetti or other pasta dishes too.

1 pound ground chicken
Pureed or chopped garlic to taste

About 1/3 cup PANKO bread crumbs
Salt and pepper
Mrs. DASH  salt free Italian seasoning
Chris and Pitt’s BBQ Sauce in business since 1949


Mix all ingredients in a medium size bowl and mix with a spoon or your hands,  if you don’t mind sticking your hands in raw meat, but you can feel the texture better that way!

Or simply mix with the paddle of your Kitchenaid mixer.

Bake at 375 degrees until done,  about 30 minutes, if baked in a greased muffin pan, or silicone muffin pan.

Serve with homemade mashed potatoes or a simple baked potato and a green mixed salad.
