3 small zucchinis sliced
12 ounces sliced mushrooms
1 Clove of elephant garlic, less if you aren’t a garlic afficiando.
3 14.5 oz diced tomatoes ( I used Great Value), undrained
1 14.5 oz can Italian seasoned diced tomatoes, undrained
2 ripe ROMA tomatoes, diced
1 large roasted red pepper, diced into small pieces (I used GUILIANO brand)
3 or 4 tablespoons good quality extra virgin olive oil
Mrs. DASH Italian Blend Salt Free Seasoning
A little bit of sea salt. ..to taste, if needed.

1. Put all ingredients in a slow cooker and cook at 350 degrees for 6 hours….
Put over any kind of Pasta or Cooked Rice.
The rest of the 2 zucchinis and 2 ROMA Tomatoes can be diced with a little Italian seasoning or Mrs Dash Italian Blend Seasoning with a drizzle of extra virgin olive oil and some Balsamic vinegar for a light, refreshing salad topping.
