Spinach Stuffed Turkey Meatloaf

1 pound of Butterball ground turkey or other hormone free brand

1/2 teaspoon Colman ground mustard

1 cup homemade corn bread crumbs, that have been dried prior. You can also use bread crumbs, but the flavor will be slightly different.

To taste garlic powder, Badia Seasoning Complete, and ….
I don’t want to tell you how much of these to add because everyone’s taste is different. I added less than 1/2 teaspoon of each in the meatloaf I made.

1 egg

Mix all ingredients together until well blended.

I greased a silicone meatloaf pan with a removable interior with canola oil spray and added half of the turkey mixture. Then I added about an inch thickness worth of fresh uncooked baby spinach on top of the turkey mixture. Then top with the other half of meat mixture.

The spinach will cook in the loaf. You don’t want to overcook the thing to death like they do in many recipes.

Then top the meatloaf with your favorite chunky salsa.
Some great choices are:

1. Tostito’s Chunky Garden Style
2. Trader Joe’s Roasted Garlic
3. Trader Joe’s Pineapple Mango

Bake on a baking sheet for 45 minutes at 400 degrees.

Serve with steamed vegetables and a baked potato. It makes a nice healthy but really delicious dinner.
