Aileen’s Pumpkin Bread from The Bowman House in New York

Is fantastic recipe comes from one of my favorite books called the American Country Inn Bed and Breakfast cookbook by Kitty and Lucian Maynard.
From Kitty and Lucian’s description of the Bowman house it’s a place I would like to go one day. Evidently it is located in the heart of the wine country and I’d a restored 1880’s house.

1 cup pumpkin
1 cup sugar
3/4 cup oil
2 eggs
1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chopped nuts – optional

Mix all ingredients together and 303 number to 10 cans or you can make three round loaves out of it or smaller standard loaves.

Bake at 350 degrees for 450 minutes.
