2 medium size zucchini, sliced thick on a mandolin or V Slicer
1 large Japanese eggplant -grill on a cast iron grill plate or on a pannini press on high setting.
2 tomatoes, thick sliced. …not grilled and added in after the zucchini and eggplant or grilled.
Brush your grill with some canola oil or olive oil and let it get good and hot before you put the vegetables on it.
