Rita Davenport’s Quick Sourdough Pancakes

1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
One egg
1 cups sourdough starter
1 cup milk
3 tablespoons vegetable oil

Mix all ingredients together and mix until just moistened and dry ingredients are combined.

Place a griddle on medium high heat and cook pancakes in 1/4 cup to 1/2 cup dollops, until golden brown on each side.

Variations

Pecan- Fill 3/4 cup to 1 cup chopped pecans into the batter and serve with apricot syrup.

Blueberry- gently fold in 1 cup fresh blueberries into the batter, and cook as usual.
