Polly’s Easy Bunny Easter Cup Cakes

2 cups heart-healthy Bisquick

3/4 cup granulated sugar

3 tablespoons canola oil

One egg

1/2 cup evaporated milk

1/4 cup water

2 teaspoons Mexican vanilla

Other Decorations

Wilton white icing
Wilton rainbow sprinkles
Wilton marshmallow bunny ears
Wilton Springtime cupcake liners of your choice

Mix all ingredients together in a bowl or in your mixer in ads your choice of rainbow colored sprinkles into the batter. Just fold the sprinkles and don’t mix it too much because the color will come into the cake batter.

Put in cupcake liners in a cupcake pan, and spray non-stick spray on the pan in case the cupcakes go over the pan, so they won’t stick.

Bake at 350 degrees Fahrenheit for 15 minutes, and check to see how your cupcakes are doing. Check every 5 minutes until they’re done and test baked with a toothpick.

Cool completely and top with buttercream icing, cream cheese icing or you can buy Wilton’s pre-made icing and then put the icing into a pipette-if you’re short on time.
