Polly’s Lemon Comb Bread (Peineta-Bread)

1 tbsp SAF brand instant yeast at room temperature.

A sprinkling of granulated sugar to activate the yeast

3/4 cup very warm water

Mix the yeast, very warm water, and about 1/4 teaspoon granulated sugar in the bowl you’ll be using to make the bread-mixing by hand or with your professional-quality mixer black KitchenAid.

if your yeast is really fresh like mine and you keep a little bit of it at room temperature so you can bake with it and the rest in the fridge – you should see the least really bubbly after about not even 5 minutes.

In a microwave 4 cup casserole dish or large Pyrex measuring cup with 4 cup capacity mix:

1/2 cup evaporated milk and one half cup water.

Microwave the milk 1 minute and then let it sit about five minutes till it cools a little bit.

Then in the same measuring cup add 1/2 cup canola oil, almost 1/2 cup of lemon juice with about 2 lemons worth of lemon zest,
2 tablespoons of granulated sugar and
2 teaspoons salt..

Add the Liquid mixture to the bubbling yeast water mixture….

Add in 6 cups of all purpose, unbleached flour and…

Mix by hand or *my way* is -let your Kitchen Aid mixer do the laborious part for you of kneading, with the dough hook about 10 minutes.

Check on the status of how evenly the flour is being incorporated into the liquids, while it’s on setting 2 on a KitchenAid mixer.

I added 5 cups of the All Purpose unbleached flour and then let it knead most of the way then added the last cup, after it had kneaded eight minutes and formed a nice ball. I then added the last cup of flour, making 6 cups total.

Let the dough ball rise about 45 minutes, until doubled in size.

Then shape unto 3 loaves or 4, depending on how many people you’d like to give them to….and yourself. Three of my friends are getting fresh from the oven loaves later today….and the loaf shaped one is mine.

I’m using parchment paper this time, and it makes everything so much easier. Just take your kitchen shears and measure out about 6 inches larger than what your pan is all the way around- Then the dough balls into the pan.

Let rise another 45 minutes, until doubled in size.

Bake in a 350 degree Fahrenheit oven for about 25 minutes.

If you’re making 4 smaller loaves, then you’ll bake them slightly less-about 20 minutes.
