POLLY’S Spinach Feta Cheese & Onion Crustless Quiche

1/2 cup Heart Healthy Bisquick
1/2 cup cottage cheese
1 cup milk, whichever kind you like
About 1/4 cup crumbled good quality feta cheese
3 eggs or 3/4 cup egg substitute
1/2 cup chopped sautéed or steamed onion
10 Oz baby spinach steamed in a double boiler with a lid- easier that way and it doesn’t steam up the kitchen
1/4 teaspoon garlic paste

I know you see tomatoes in the photo but I decided not to use them. The Volume of all the other ingredients filled the pan up.

Grease a deep dish pie pan with non stick spray and then put steamed spinach in greased pie plate, then add steamed onion and feta cheese and then Bisquick/cottage cheese /milk/garlic mixture on top of vegetable cheese mixture in pie pan.

Steam spinach and chopped white onion until nicely done.

Bake at 350 degree convection or conventional oven 35 minutes until done in center testing with a tooth pick. Let cool slightly before cutting.
