Sliced cooked potatoes
Pesto, homemade or Ranna-brand or Trader Giotto’s brand from Trader Joe’s or from a good Italian deli.

The easiest recipe in the world. …

Just slice russet potatoes about medium size thickness and cook in boiling water until tender.
Pour cool water over the cooked potatoes and rinse in a colander to remove the excess starch.

Add a few tablespoons of prepared pesto to the cooked potatoes gently mix with a spatula, making sure you don’t break up the potatoes while you’re mixing the pesto over to cover.
Refrigerate and serve either cold or hot. This makes an awesome picnic addition.
