Polly’s Toasted Oat Bran Muffins




Adapted by Paulette Motzko from the recipe on the Trader Joe’s toasted oat bran box.

2 cups TJ’s oat bran uncooked 1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1cup fat free or 2% reduced fat milk
2 eggs
1/4 cup honey
2 tablespoons canola oil
1 teaspoon pure vanilla extract
1 cup dried cranberries or raisins and
1/4 cup chopped nuts if desired.

Heat oven to 425 degrees Fahrenheit.

Line 12 medium muffin cups with paper baking cups or spray bottoms only with no stick cooking spray.

Combine dry ingredients and mix well.
Combine milk, eggs, honey, vanilla and oil and mix until dry ingredients are moistened.

Add walnuts, if using, or other nuts and raisins or cranberries, and mix until combined.

Fill prepared muffin cups and bake 15 to 17 minutes or until golden brown.

Variations: In place of raisins and walnuts stir into batter one half cup fresh or frozen blueberries or 1 medium ripe banana.

Makes 12 muffins.
