Banana Blueberry Muffins


I thought I put up the recipes for this alrwady. Oh well, it’s been a bit hectic around here…understatement of the year!

2- 1/3 cups homemade
Snack Cake Mix recipe on

1/3 cup Canola oil

1 egg

1 mashed banana

1/2 cup of either milk or buttermilk

1/2 cup of chopped walnuts or pecans if desired

Six ounces of organic blueberries

Preheat the oven to 350 degrees.

Pour the snack cake mix into the large bowl and add the egg, oil, mashed bananas and milk or buttermilk. Mix with a long wooden or silicone spoon and mash banana into the wet ingredients with a fork. You could also mixes for the mixer but there’s no need because this comes together so easily.
Once you make the mix you can make all kinds of things too.


Once the batter is blended nicely, and all the dry ingredients are incorporated into the wet, then gently fold in the blueberries, being careful so that you don’t smash them!

You can either make this into an 8 or 9 inch square cake by pouring it in a greased baking pan you can do as I did.

Line a muffin pan with cupcake liners and then bake the batter in a muffin pan. I baked the muffins about 15 minutes, and I used a stainless steel ice cream scoop to portion out the muffin batter. That way they all come out the same size and it doesn’t make a mess pouring the batter in the muffin cups .

Bake until a toothpick inserted comes out clean.


Snack Cake Mix

Mix 8 -3/4 cups all purpose flour, 2 tablespoons baking soda, 1 tablespoon salt, and 5 and a fourth cups granulated sugar.

Mix all those ingredients really well with the wire whisk or you could even mix it with your KitchenAid mixer with a wire whisk attachment. Every recipe that uses this mix uses two and a third cups- that’s equivalent to one package of the snack cake mix.
