Banana Yogurt Snack Cakes




2-1/3 cups Homemade Snack Cake Mix on site

1/3 cup canola oil
1 ripe mashed banana
1/2 cup plain yogurt
1/4 cup rainbow sprinkles in the batter and one teaspoon on each of 3 mini snack cakes.

Mix all ingredients in KitchenAid mixer or in a large bowl with large spoon and blend until dry ingredients are incorporated.

Preheat the oven to 350 degrees and pour equal proportions of cake batter into each of 3 small loaf pans, making sure you sprayed each with nonstick spray.

Pour equal amounts in each pan and then bake for about 25 to 35 minutes, until the loaves rise nicely and tests done with a toothpick.
