Rainbow Confetti Corn Bread

2 cups Home Made Quick Mix-recipe on Web site

6 tablespoons corn meal

2/3 cup granulated sugar

Two eggs

1 cup water or milk

1/4 cup melted butter or 1/4 cup canola oil


Mix all ingredients in a medium-size bowl and stir until all the lumps are mixed together and the dry ingredients are combined with the wet.

Line muffin cups with paper cupcake liners and pour batter about 3/4 full, using a half cup measure or a stainless steel scoop.

Bake in a preheated 350 degree oven for about 25 minutes, or until a toothpick inserted in the center of each muffin comes out clean.
