Lemon Coconut Emoji Cupcakes

1-1/2 cups all-purpose flour
2/3 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup low-fat vanilla yogurt
1/4 cup low-fat milk
1/4 cup butter, or margarine melted,
2 large eggs or 1/2 cup egg substitute
1 teaspoon pure vanilla extract
1 tablespoon grated lemon peel
1 teaspoon lemon extract
4 drops yellow food coloring
1/4 cup unsweetened flaked coconut

1. Preheat oven to 350 degrees Fahrenheit and place Liners in a12 cup muffin/ cupcake pan.

2. Combine flour, sugar, baking soda, and baking powder in a large bowl and mix well.

3. Whisk yogurt, milk, butter, eggs and vanilla extract or lemon extract in a medium Bowl. Add to flour mixture and stir until just mixed.

Stir in lemon peel lemon extract, yellow food coloring and unsweetened coconut.


Pour batter into muffin cups each batter flavor should fill 4 muffin cups.



4. Bake 20 minutes, or until a wooden pick inserted the center of a cupcake comes out clean. 

Cool completely. Place frosting in small bowl and whip with electric mixer until soft and fluffy and then frost the cool cupcakes.

Polly’s-Lemon Coconut Emoji Cupcakes with Vanilla Coconut Icing

Bisquick Heart Smart Baking Mix made with Canola oil to streamline things….

Coconut-Lemon Muffins

2 cups Heart Smart Bisquick baking mix

1/3 cup granulated sugar

2/3 cups low fat evaporized milk

2 tablespoons Canola oil or olive oil

2 tablespoons fresh lemon peel

1/2 teaspoon pure lemon extract

1 teaspoon colored rainbow dollies cake decorations

1/2 cup organic unsweetened flaked coconut – I used Great Value brand

DOLLIES Emoji Decorations-you don’t bake these folk, as they’re made with egg whites!

Vanilla Coconut Icing

1-1/2 cups confectioners sugar

Watkin’s pure vanilla extract about one-fourth teaspoon to 1/2

Stir in enough 2% low fat evaporated milk to make a nice frosting, not a glaze.  Add in some unsweetened flaked coconut to make a nice thick Icing that looks like the filling in a Mounds Candy Bar, and tastes like it too! 

Top cooled cupcakes with coconut icing and then top with one emoji smiley face.
