Fresh Nutmeg Butter Cookies

1 cup butter

1/2 cup sugar 

1/2 cup egg substitute

1 -1/2teaspoons pure vanilla 

3 cups all purpose unbleached flour

1/2 teaspoon aluminum free baking powder

1/4 teaspoon sea salt

1-1/2 teaspoon freshly grated nutmeg (I have a nutmeg mill that makes grating the whole nutmegs easier. I ordered mine through Walmart.com.

Simply mix all the ingredients together in a very large bowl either by hand with a wooden spoon, or with your study mixer. If using a KitchenAid mixer, you will want to use the paddle attachment.

I greased my cookie sheet with Pompeian Olive Oil Cooking Spray, but you can cover your baking sheet with parchment paper if you like.
After mixing you can shape them in rounded flattened balls or scoop in a spritz molded cookie gun, or roll large tablespoonfuls can cover with pearl sugar then put a almond in the center or coat with pine nuts or put a drained maraschino cherry in the center and then bake about about 10 minutes at 375 degrees, or until done.
