Menu 4-Polly’s Southwestern Style Penne

I bought every great flavor of Kraft Fat Free dressing they make and have been experimenting with them, using them in new and inventive ways. I had this last night and it turned out really well. It is not a typical pasta dish, but I think that’s one of the reasons I like it so much. Plus it is vegetarian,  has a fair amount of protein because I made it with whole wheat Penne pasta. The sauce has virtually no fat because it was made with Mild El Pollo Loco salsa, diced onion and 2 tablespoons Kraft Fat Free Catalina dressing topped with some fresh cilantro.

One half cup (measured uncooked) whole wheat penne pasta

One third cup El Pollo Loco fresh mild salsa or the salsa of your choice

1 to 2 tablespoons of Kraft fat-free Catalina dressing

1 to 2 tablespoons minced onion

Fresh cilantro


Cook pasta in boiling water until then, about 12 minutes, until AL dente.

Mix sauce ingredients in a large, deep bowl and then add cooked and drained pasta to bowl, mixing thoroughly.

Top with fresh cilantro.
