1-1/2 cups milk of your choice
freshly ground nutmeg
3 beaten eggs
1/3 cup sugar
1 teaspoon pure vanilla extract or one teaspoon vanilla bean paste. I used the products shown in the picture. I found it on Amazon.
Mix all the ingredients together in a 4-cup measuring cup and then I baked mine in a water bath with 4 custard cups in a larger pan filled with boiling water at 350 degrees, in my convection oven, until the custard’s are set and don’t jiggle anymore.
I used a nutmeg grater so awesome from Cole and Mason to Great the nutmeg and I kept scraping my fingers on the nutmeg grater and I don’t with this great thing. Cole and Mason it been making paper bills in Nutmeg Mills for over 100 years.
I used an electric water kettle to boil the water and then just simply poured it in to the water bath.

Original recipe here:
I took the plain recipe and addedication vanilla bean paste in place of the vanilla extract.
I made a lower fat one with low fat milk, but to make it more rich use either whole milk or low fat evaporated milk.
