Polly’s Chicken Teriyaki Brown Rice

  • 2 cups long grain brown rice
  • 4 cups vegetarian stock or chicken stock
  • About a cup or more of frozen peas and carrots 
  • 4 chicken breast
  • Mrs. Dash teriyaki marinade
  • Mrs. Dash chicken seasoning

Cook the chicken in a hot non-stick skillet with a little bit of extra virgin olive oil or non-stick spray. I marinated the chicken in mrs. Dash teriyaki chicken marinade, which is low in sodium I’m high in flavor 4 2 days to really get a good flavor on it.

Once the chicken is cooked and no longer pink in the center, then move it to a clean dish with tongs. It will cool there until you cut it into small bite-sized pieces to add to the rice later.

Simply make the rice as you would any other rice, which is add the rice into the same pan where the chicken was cooked and then add the water or stock, add the frozen vegetables and simmer until cooked about 25 minutes.

Add the cooked chicken last to the dish and season with the Mrs. Dash Chicken seasoning.
