Applesauce-Oatmeal Muffin Mix

  • 2 cups rolled oats
  • 1- 1/2 cups unbleached all-purpose flour
  • 1- 1/2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 cup raisins
  • ******************
  • applesauce unsweetened added to the dry mix when you go make them 
  1. Combine the Odes, flowers, baking soda, baking powder, salt and spices. Stir in the raisins. Transfer to an airtight container and storage room temperature. Package the applesauce separate the pair with the following recipe:
  • To make a dozen muffins, first preheat the oven to 375 degrees.
  • Lightly oil 12 muffin tins or line them with cupcake papers.
  • In a large bowl, beat 1 cup of the applesauce with 1/2 cup firmly packed dark brown sugar, 2 eggs and 1/2 cup vegetable oil. Measure out half of the mix and add in the applesauce mixture, stirring just until everything is combined.
  • Spoon the batter into the prepared tins, and bake for 20 to 25 minutes.
  • When a wooden toothpick inserted in the center of one of the muffins comes out clean they’re done. Then cool on a rack.
  • This makes 24 muffins.
