Polly’s Gluten Free Waffles with Honey Almond Cranberry Granola

    • 1-1/2 cups Pamela’s Gluten Free Pancake and Waffle Mix
    • 3/4 cup water, milk, almond milk or soy milk
    • 2 eggs or the equivalent of 2 vegan eggs
    • 1 tablespoon grapeseed oil or canola oil or olive oil

    Blend all ingredients together thoroughly and then cook in a greased waffle iron until done.

    Pamela’s Gluten Free Pancake and Baking Mix is made with almond flour, which gives all your baked things a slightly nutty flavor.

    The mix also makes chocolate chip cookies answers shown in the recipe on the back of the bag. I have never seen the makes anywhere before until ordering from Amazon. Also makes it really good banana bread, muffins and pancakes and biscuits.

    This makes 3 waffles, so if you have a family, you will wipe them all out at once.

    However, if you’re the “Lone Rangette” like I am, then you can eat breakfast for 3 days off it!

    I served mine with Earth Balance vegan spread and a drizzle of honey and then I drizzled some of the honey almond granola with cranberries over the top.

    Feel free to flavor the waffles with bananas or blueberries also.
