Roasted chicken, baby spinach & garlic scrambled eggs

    • 1/2 cup egg substitute
    • 1 cup baby spinach
    • 1 teaspoon minced garlic
    • 4 oz rotisserie chicken, cut cut up
    • 1 tbsp Earth Balance vegan spread

Melt the one tablespoon Earth Balance vegan spread on medium heat. The Earth Balance is awesome because you can bake and Sautee at high heat with it and foods aren’t greasy, plus you get way more for the calories and nutrition compared to butter.

It is high in all kinds of vitamins and omega-3 fatty acids in a medium-sized Skillet and make sure it’s coated all the way around.

After the Earth Balance melts then add the cut up chicken, the spinach and sauteed with 1 teaspoon garlic. Saute on the medium-high heat until the chicken is warmed in the spinach is wilted and then add the egg substitute.

As long as you the bottom of the pan is covered with the Earth Balance vegan spread, your scrambled eggs shouldn’t stick.
