Easy Much Healthier Yogurt Pancakes

All you need is

  • 2 cups of either regular Bisquick or heart-healthy Bisquick
  • 1 cup nonfat plain yogurt or Greek yogurt, which will increase the protein content of the pancakes and
  • enough Blue Diamond almond milk to make a nice texture for a pancake, which is up to you.
  • 2 Eggs Or 1/2 cup egg substitute

You could add some protein powder if you wanted to increase the protein content even further.

The thicker the pancake, the longer it will take to cook.

Heat a little extra virgin olive oil or canola oil in a non-stick skillet to medium high.

I use a minimum of oil in the pan and then use a silicone basting brush to move the oil around in the pan so it covers all areas.

You can also use Earth Balance Vegan Spread. It melts quickly and has a high Flashpoint as well as you can have up to a tablespoon of it and it’s very good for you and low in calories and fat.

All these techniques when combined together, make for healthier eating all the way around.

That way, you can have the things you like but they’re just made slightly different with different ingredients.

Simply cook the pancake until you see bubbles appear on top and the texture of the pancake looks relatively dry. Once the top looks like it’s cooked flip the pancake gently over and cook the other side.

You might need to adjust your burner and lower it while you’re cooking these because it has a high amount of dairy product in it and you don’t want to burn them.

Also you can add in other ingredients like sliced banana or raisins or fresh blueberries to the pancake if you like.
