Lower Fat Banana Nut Muffins Made with Egg Substitute and Greek Yogurt

  • 1 box of Sam’s Club banana nut muffin mix
  • 1/2 cup egg substitute
  • 1/3 cup cup Greek yoghurt
  • 2/3 cup purified or spring water
  • 1/3 cup grapeseed oil

  • Set oven to 400 degrees Fahrenheit.
  • Mix all ingredients in a bowl with a sturdy spoon, mixing thoroughly, until lumps are mixed, or as I did in a KitchenAid mixer on low speed with the paddle attachment.
  • Once your oven is at, then line a muffin pan with paper liners or you can spray Baker’s joy and a standard muffin pan.
  • This recipe makes 9 standard size muffins.
  • I baked six ordinary Muffins with baking cups and four that were baked in a silicone muffin pan shaped like rosettes.
  • Feel free to use any kind of pan you want that’s the fun of baking!
  • Bake at the minimum time which is 23 minutes, and then check to see if the muffins are done with a toothpick inserted in the center gently.
