Easy Almond Flour Muffins Recipe – Adapted by Polly Motzko from Snappy Gourmet


  • 8 oz of almond flour
  • 1/2 teaspoon baking soda
  • 3 eggs or the equivalent an egg substitute, which would be 3/4 cup.
  • 1/4 cup almond milk
  • 4 tablespoons honey
  • 1 teaspoon lemon juice
  • 3/4 cup unsweetened coconut

Mix all ingredients together until blended.

Bake in a 400 degree oven about 15 minutes, or until a toothpick inserted in the center comes out clean.

One of the coolest things about this recipe with Zing how simple the leavening was which was just the combination of the baking soda and the acid in the lemon juice reacting to the baking soda I’m watching it bubble and that was that was it, no baking powder was used just that. Baking soda requires an acid of some kind for it to rise and act as a leavening. Being there Kitchen Science Queen I am from reading the books of Howard Hillman called Kitchen Science, it makes me want to try that combination another recipe and see how it works.
