Miss Polly’s Healthy Breakfast Sandwich

I discovered a new product that allows me to microwave an egg or egg substitute transforming it into a breakfast sandwich in only 1 minute and it works perfectly for breakfast sandwiches with a really good for you and high in protein.

If using an egg, only zap it for 30 seconds, or it will explode! My microwave is now and high power, just microwave for the bare minimum. Your egg will cook the rest of the way in the covered container.

All I did to make this with simply take

  • 1/4 cup egg substitute
  • 2 tablespoons Pico De gallo
  • 1 tbsp of half and half and microwave for 1 minute.

Then I simply took one warmed up English muffin, put a little bit of mayonnaise on it, and added the cooked Mexicali style egg on a warmed up English muffin. I put mine in my Cuisinart convection oven on toast.

Other nice additions would be some Swiss cheese or cheddar cheese.
