Awesome Peanut Butter Coconut Breakfast Bars

  • 1/2 cup Earth Balance vegan spread
  • 2-1/2 cups of Stone-Sround Whole-Wheat Baking Mix ( recipe on site) made with stone-ground whole-wheat flour and extra virgin olive oil or you can use canola oil or grapeseed oil
  • 2 cups peanut butter coconut granola (recipe on site) or your choice of granola that’s good and healthy for you
  • 1 cup brown sugar
  • 1 cup sliced almonds
  • One teaspoon good quality pure vanilla
  • 3 eggs

Mix all ingredients in a KitchenAid mixer or in a good quality mixer or by hand with a really sturdy spoon.

Line a large 13 x 9 baking pan with parchment paper and then Pat out the dough until flattened uniformly so it cooks evenly.

Baked about 20 to 25 minutes at 375° F. and then cool on a trivet. Once cool, then slice with a very sharp knife into 24 pieces.
