“Thanks to Wendy with a Caring Heart”- Spinach, Onion Monterey jack Crustless Quiche brushed with Herbes de Provence Vinaigrette

  • 8 eggs
  • 1 cup baby spinach
  • 1 chopped white onion
  • Fresh or dried parsley to your own taste
  • About 1/4 cup or more Monterey jack cheese
  • Minced garlic

Simply put the spinach in the bottom of a deep dish pie pan then add the onion, then add the dried parsley or fresh, any minced garlic that you’d like to add and then take the eggs and then crack them into the filled pie shell.

Take a fork and then blend it all together lightly, then sprinkle with garlic salt with parsley in it. Bake in your microwave for 5 minutes to 7 minutes, until the crustless quiche is finished and cooked until cooked throughout, but not dry.

I had not been able to go to the store in what seemed like forever to get fresh produce like I normally cook with.

She was at the orthodontist’s office and even in spite of working, and having a full schedule, and in getting her teeth done- she made time for me because she thought I needed help and to know that there was one person who truly truly cared in the state .

She asked me “what do you need from the store and I’ll get it on my way home and simply bring it to you.”

“It’s no problem for me.”

You see?

Countless people heard my situation, over the last week but all it takes is one caring individual with a heart that is pure like gilded in gold to make a difference in someone’s life. My life.

I mattered.

She made a difference in my life, and I’m reminded of that when I see the beautiful red Fuji apples, lemons on my table, the onions I can still cook with, the eggs that I can make other dishes with.

Now I can make big plans to make eggplant parmesan, used the Monterey Jack that made this quiche and some other things too.

Thank you Wendy for restoring my faith in mankind, especially in a callous, apathetic town like Las Vegas Nevada, where Money Rules and people don’t.
