Bursting Blueberries Pancakes with Shredded Organic Coconut

To make these all I did was make the Bob’s Red Mill pancake recipe and then I added some organic coconut and really amazing plump fresh blueberries to the batter. I added extra almond milk to the batter to get it to the right consistency.

And I cooked them as you would cook any of their pancake, I added some canola oil to a hot cast iron skillet and then just cooked on each side until each side was nice and dry and bubbly and cook throughout. If You See Me Shine the edges on a pancake that just means they’re not cooked yet.

I got the blueberries at Walmart and I’ll have to go back and get some more because they were the juiciest ones I’ve ever had!
