Recipe for Polly’s Healthy Fajita Stir Fry

Healthy Fajita Stir Fry

You’ll need a large Wok or large cast iron to make this recipe because it will make quite a bit.

You’ll need:

1/2 a chopped onion
1 chopped bell pepper
1 pound chicken breast, sliced and cut into small pieces
Juice of 1 large lime
World Market Fajita Seasoning added to taste
Roasted garlic…..I love this stuff and so will you!
2 Tablespoons canola oil, extra virgin olive oil or grapeseed oil-

(Or you can have all three by getting the Pompian Mediterranean Blend heart-healthy oil that I used in this recipe.)

Add the chicken and then cook until there’s no visible pink left, and then once cooked remove from pan.

Add in the celery and bell pepper, and cook to your own preference.

You’ll be adding in the roasted garlic at the very end so it doesn’t overcook, and it will add a wonderful mellow flavor to the dish.

Once the pepper and onion are cooked to your liking, add in the cooked chicken and then the juice of one lime and add in about 1/2 tbsp of the fajita seasoning, adjusting however much you like to taste.

Serve this with cooked rice noodles or with the rice of your choice.

Note the leftovers from this recipe can be used to make the Chicken Fajita Soup made in a tiny crock pot.
