Polly’s Recipe for Fantastic and Healthy Chicken Fajita Soup

Chicken Fajita Soup

To make this dish I used my smallest Crock-Pot, which I haven’t used in Forever which is I believe two and a half quarts.

I forgot how great it was for just a single person like me. That way, you can make whatever you like to serve maybe 2-4 people or one lucky, happy person can get a few meals from it.

Began with 1 quart jar full of my leftover healthy stir fry.

I simply dumped it my crock pot and then poured over with one 32 oz container of fat-free πŸ” broth. I mixed that up will some added leftover long grain-about- 1/2 cup, steamed rice.

I mixed everything thoroughly, making sure all of the ingredients were adequately mixed.

I then added an extra 1/4 cup chopped onion, and microwaved 1 medium sized sweet potato about 4 minutes, pricking the 🍠 with a sharp knife to let out the steam while it cooked. I cooked the sweet potato on high for 4 minutes top of a paper towel.

I let it cool for about 5 minutes.

You’ll find the skin comes off evenly and effortlessly then.

This adds a nice sweetness to the soup and all the chicken juices blend with the stock and all the Fajita seasonings give the broth a wonderful, rich flavor that you will really 😍.

I heated the soup until hot and all the flavors are blended then added the roasted garlic on top.

If you thought leftovers were boring, think again. By using your crock pot and some simple stocks, herbs and spices jazzing up what you thought were leftovers, but instead are incredibly flavored, easy “remakes” from the original dish.

It is amazing what some fat free chicken broth, and other star ingredients can do to transform a dish into according to whatever your taste desires.
