Easy Red Pepper Broccoli Stir Fry with Mandarin Sauce

2 red peppers, seeded and chopped into 1/2 inch to 1 inch pieces
1 onion chopped roughly
1 head of broccoli trimmed cut and trimmed to include the most tender florets
One ounce of dried Shitake mushrooms soaked in water to cover for 30 minutes and then drained
1 bottle of Panda Express Mandarin Sauce-(use only about a cup for the whole dish)
Walnuts for garnishing
1. Chop peppers and remove seeds
2. Cut broccoli stalk so that you are only including the most tender part of the broccoli, and cut into florets
3. In a large wok heat wok over high heat until very hot and 2 teaspoons sesame oil, or corn oil, or peanut oil becomes very hot, then add vegetables.
4. Cook until the vegetables look tender crisp.
Add in the Mandarin sauce to suit your taste, about 1/4 cup.
Make some steamed rice while you are cooking the stir fry which consists of a two cups water to 1 cup jasmine or long grain rice and steam with the lid on until the rice is done and the water is absorbed.
Make Ahead Trick: Make a bunch of jasmine, rice or long grain rice or white rice and then put it in freezer containers or plastic bags and then freeze. You can then take the frozen rice out in the morning and it will be thawed by lunch time. You can take it along with the stir fry for healthy lunches, like I do.
To reheat frozen rice: Add your serving amount in a small non stick pan and add one tablespoon water to the pan and heat covered low until rice heats and steams hot, stirring frequently to make sure the bottom doesn’t brown.
Serve the stir fry with steamed rice and walnuts or pecans on top to garnish.
Make some jasmine, green, orange pekoe tea, or Constant Comment brand to go with this very healthy and easy meal.

You also can use Garlic Herb marinated chicken breast, you can find in your frozen section.
