I used Trader Joe’s 2% Greek yogurt and their Vanilla Almond Granola that you’re both outstanding.
Whole Foods Market makes a wide array of fabulous granola you can choose from for variety.

Some things were destined to be together like almond scented angel food cake and sweet summer strawberries. If you have time and a lot of egg whites, and a really good mixer like Kitchen Aid, then bake your own angel food cake from scratch. Otherwise, a bakery bought one will suffice.
Slice the best, juiciest strawberries you can find and top the angel food cake with them and sprinkle with a fine dusting of either super fine granulated sugar or confectioners sugar.

If you would have told me 4 years ago doing a blog would be so much work and involve not just writing ability, ingenuity, photography know how, computer tech things and cooking…I wouldn’t have believed ya. It does!
I have gotten better at it though and maintain several and really don’t know how I do, but my phone has allowed me a lot more flexibility & freedom to capture ideas when I am blessed with them…and I am blessed with quite a few through the day.
Here are the photos for the dish I call “Chicken with Mushrooms and Peppers in Roasted Garlic Sauce”. It was adapted from a recipe called “Salsa Chicken” by a fellow blogger friend of mine.
6 large chicken thighs…remove skin
One can Progresso Roasted Garlic Recipe Starter
One cup Pace GARDEN style Medium Salsa
One cup diced green peppers
One cup diced white onion
8 ounces white mushrooms
1 teaspoon dried oregano
1 teaspoon minced garlic
Serve with your choice of steamed rice or cooked egg noodles and a beautiful green salad with grape tomatoes and balsamic dressing or Italian dressing.
Add the Roasted Garlic sauce and then the salsa.
The flavor of this sauce after the chicken cooks with it is out of this world as my Nanny used to say.
Cook in a 400 degree oven until the chicken is tender for about 45 minutes, and then check to see if the chicken is done. (No red appearing anywhere when cut at thickest part with a sharp knife.)
Enjoy with Chicken Flavored Salsa Rice
One cup long grain rice
Two cups low sodium no msg chicken broth
Bring rice and stock to boil and then simmer on medium with lid on (preferably glass lid to see how the rice is cooking), until done.
Spoon a nice helping of the rice and put a chicken piece on top. The chicken will be so tender it will fall off the bone.
This is very easy to make.
A prep tip is you can chop the onions, mushrooms and peppers the night before.

I took out the half cup of sour cream and package of taco seasoning in the original. I also used Progresso Roasted Garlic Recipe Starter instead of the Condensed Cream of Mushroom soup. The ingredients are far better and I cut about 200 mg of sodium and lots of fat from the original dish. The original was a great springboard for this one.
