one and a half cups old fashioned oatmeal plus one fourth cup additional oats or almonds
1/3 cup wheat germ
One third cup brown sugar
1 fourth cup almonds, chopped
One fourth teaspoon cinnamon, ground
1 banana, one fourth cup canola oil or olive oil or a combination of both, 1 teaspoon pure vanilla extract. I used Watkins brand
Banana Oat Almond Granola
This is not a super sweet granola. You can add a quarter cup of honey to the banana mixture with the brown sugar, oil, and vanilla, if you like it sweeter. Then just cook the granola an additional minute or two.
This has plenty of old fashioned oats, wheat germ and almonds.
Whirl around the banana, oil, Watkins pure vanilla extract brown sugar in a Magic Bullet or thoroughly by hand. It comes out like a banana mayonnaise and it goes over the grains.
I made it to go along with my Trader Joe’s 2 percent Greek yogurt for my morning breakfast parfait.
Breakfast Parfait- Take some greek yogurt put in a parfait glass or bowl, add in some fresh fruit, and top with the Banana Oat Granola.
YOU’RE gonna find it is a delicious PART OF YOUR MORNING routine.
This is a microwave recipe that I adapted from a recipe in the Better Homes and Gardens Microwave Cooking for Kids cook book.
Total time it will take you to cook this granola is about 10 minutes.
It cooks on high for 3 minutes, then you stir it.
You cook it another 3 minutes on high, then stir it, and cook another 2 and its done!
Then just let it sit out in the open so that it can continue to harden up
Adding in raisins. Dried cranberries, dried cherries and coconut are great additions as well…about one half to one cup.
