Chocolate Chip Coconut Baked Doughnuts
Recipe adapted by Paulette Le Pore Motzko from “Double Berry Doughnuts” by Bisquick Breakfast & Brunch

2 cups Original Bisquick mix
1/4 cup granulated sugar
2/3 cup milk
2-1/2 teaspoons pure vanilla
1/2 cup semisweet chocolate chips
1 cup powdered sugar
4-1/2 teaspoons milk
Flaked coconut to dunk iced doughnuts in
You will need a Wilton Baked Doughnut Pan to make this recipe.
For each doughnut put about 1/4 cup batter carefully spooned into a greased Wilton Doughnut Pan.
Spray doughnut pan with non stick spray. I like Emeril La Gasse’s Non Stick Canola Spray for baking, stir frying and grilling. It is awesome!
In a medium size bowl, mix Bisquick Baking Mix, 2 tablespoons of the granulated sugar, 2/3 cup milk, 2 teaspoons of the vanilla, unless you are using a concentrated baker’s vanilla, at which time you add enough to equal two teaspoons regular, and add one egg. Stir until blended, but don’t over mix.
Add in semisweet chocolate chips to the batter. You can also add any other kind of baking chips like butter scotch chips or even Ghiriadelli White Chocolate Premium Chips to the doughnut batter. I like to add some grated fresh nutmeg to the batter because it just doesn’t smell or taste like a doughnut to me without it!
Once the pan is filled with doughnut batter-should be 6 of them, bake for about 7 to 9 minutes and then immediately remove doughnuts to a cooling rack then cool completely before icing.
Mix 2 cups powdered sugar with 4 -1/2 teaspoons milk until easily spreadable
Garnish with flaked coconut once iced
You will be able to make this in a flash and it is impressive enough for company!

When I was a teenager, I couldn’t eat mushrooms. They gave me terrible stomach ache, so I avoided them for years and missed them dearly. Over time I started to re-introduce them to my food shop and now I go through at least one pack of them every week. Mushrooms are one of my favourite vegetables and I’d say this is the best dish I’ve ever made with them.
I’m kicking myself as I wish I’d taught myself how to make this earlier – it’s so easy, anyone could make it. From following this recipe, I’ve learnt that it’s all about the timings and not getting ahead of yourself. If you stick to the five minutes allocated without the stock and with the stock, your stroganoff will be perfect and your mushrooms will be neither undercooked or over cooked.

This isn’t so much a recipe but merely combining a great ingredient with a top notch lemon pepper made my Mrs. Dash.
For the fish recipe, simply steam some fresh salmon sprinkled with some Mrs. Dash Lemon Pepper Seasoning Blend.
Sprinkle some of the Lemon Pepper on a nice piece of Salmon or your favorite fish and steam in a bamboo steamer lined with lettuce, stopping it from sticking, or spray it with non stick spray and cook until the fish flakes nicely, but not overdone.
I added some mixed vegetables-carrots, cauliflower and baby carrots to the mix, and then a healthy dinner is yours in no longer time than it takes to boil water.
This is simple folks, but who ever said eating good an healthy had to be hard?

I have tried others but none that has the wonderful lemon flavor this one does. It has every form of lemon in it you could possibly add: Lemon Juice Powder, Lemon Peel, Natural Lemon Flavor and Oil of Lemon, not to mention onion, black pepper, basil, bay, savory, oregano, coriander, cumin, mustard, rosemary, marjoram, garlic, carrot with a little turmeric for color and chile pepper.
Organic Macaroni with Cheddar, Mozzarella and Albacore Tuna
This boxed version whips up in a flash and all the ingredients on the box are natural with no synthetic dyes like the other guys.
If you like you can add some chopped green or red peppers that have been sauteed for a different twist.
1 box 365 Organics Macaroni & Cheddar Mix-(sold at Whole Foods Market)
2 tablespoons butter or your favorite margarine
about 2/3 cups nonfat milk or low fat milk-until the sauce is as thin or thick as you like
Cook the macaroni until the pasta is done, about 8 minutes and then drain.
In a microwave safe serving dish with a tight fitting lid, take the sauce packet that comes with the mix, add it to the bottom of the serving dish, add the milk and the butter and microwave for 30 seconds to one minute, stirring with a small whisk or a fork.
Once the pasta is cooked, about 8 minutes, drain with a colander and add to the sauce in the microwave safe dish. Add about 4 small handfuls of shredded Cheddar/Mozzarella cheese. This blend is sometimes sold as “Pizza Cheese” in the store.
Blend all ingredients with a wooden spoon.
Add two 5 oz cans of Bumblebee Albacore Tuna or 10 oz of the fish of your choice
Mix until blended and serve with steamed vegetables and fruit.
